Delicious Oreo cupcakes- recipe ♡
How's been your 2019 so far? Mine's been pretty great if you're wondering {which you're propably NOT but that's okay} Whether it's good or bad, I have an amazing idea to sweeten it up a little bit.
I'm currently on winter break which means I have more spare time to spend on doing fun things. As you may already know, I loove baking and I try to bake something different every season. I usually go for cupcakes because I think I'm best at it. You can check out my previous posts with recipes in the Food section!

This time I craved something really sweet & chocolate so when I saw a Jemma's recipe for cupcakes with oreo cookies in Jamie's Food Tube: The Cake Book I knew I had to make it.
They turned out sooo delicious & pretty, that I decided to share this recipe {modified by me} with you guys. They are a little bit harder to make for advanced bakers but believe me, you can do it! All you have to do is follow the steps carefully. So let's get baking!
Preparation time: 2 hours
Serving: 17 cupcakes
Ingredients:
Cupcakes:
-70g of dark chocolate {60% cacao}
-100g of plain flour
-50g of sugar
-3/4 teaspoon of baking powder
-20g of cacao
-1 egg
-80ml of chilled coffee
-70ml of rapeseed oil
-80ml of buttermilk
Cookie base:
-60g of butter
-100g of oreos {9 cookies}
- 2 tablespoons of clone syrup
Cream:
- 250 ml whipping cream
- 1/4 cup of powder sugar
- 70g of oreos {4 ones for the topping, 2 for decoration}
Preparations:
1. Firstly, make the cookie base. Melt the butter in a small pot. Crush 100 grams of oreos in a blender & then add them to the butter. Put two tablespoons of clone syrup & mix well. Leave to chill.
2. To make the dough, chop the chocolate, I recommend to do it in a blender. Put it into a big bowl. Add the rest of dry ingredients and mix with a spatchula.
3. In another bowl mix wet ingredients with a mixer. Then add them to the dry ones in parts, untill the dough will be well-combined and soft.

4. Heat the oven to 170 degrees Celsius! Do it now, not at the beginning, because the oven will warm up anyway and you will save energy.
5. Place cupcake forms on the baking tray and put the cookie base at the bottom of the forms to get a flat foundation. Press them tight with a spoon.
6. Then fill the cupcake forms with the dough to about 2/3 of the height.
7.Next, put them in the oven and bake for 20 minutes, check with a toothpick if the cupcakes is dry already.
8.While the muffins are baking, we're going to prepare the topping. The cream is very easy! Whip the cream with sugar powder untill it's stiff.
9. Crush 4 oreos and add them to the cream. Next, lightly mix it with a spatchula. Put it in refrigerator to get cold.
10. Cut or crush 3 oreos into bigger parts to decorate cupcakes with them.
11. Once the cupcakes are cold, put the icing on the top and top them with oreos!
